Instructions
- Prepare the Filling: In a medium bowl, combine diced peaches, granulated sugar, brown sugar, cinnamon, cornstarch, and lemon juice. Mix well.
- Assemble the Egg Rolls: Lay out an egg roll wrapper, place peach filling, fold the bottom corner, fold in the sides, and roll tightly. Seal the edge with water. Repeat.
- Fry the Egg Rolls: Heat oil to 350°F, fry egg rolls in batches for 2–3 minutes per side until golden and crispy. Drain on paper towels.
- Serve: Dust with powdered sugar. Serve warm with whipped cream or vanilla ice cream.
