  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Chopped fresh basil or parsley for garnish (optional)


Instructions

  1. Season the Chicken: Season the chicken breasts with salt, pepper, and garlic powder.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium heat. Sear the chicken for 5 to 6 minutes per side until golden and cooked through. Remove and set aside.
  3. Prepare the Sauce: In the same skillet, melt the butter, then add garlic and cook for 1 minute until fragrant. Stir in cherry tomatoes and sun-dried tomatoes and cook for 2 to 3 minutes until softened. Pour in heavy cream and chicken broth, then bring to a gentle simmer. Stir in Parmesan cheese and Italian seasoning.
  4. Finish the Dish: Let the sauce simmer for 3 to 4 minutes until slightly thickened. Add spinach and cook until wilted. Return the chicken to the skillet and spoon sauce over the top. Simmer for 2 more minutes to heat through. Garnish with fresh basil or parsley and serve hot.
