Description

Creamy Dijon Chicken is a luscious, French-inspired main course featuring tender seared chicken breasts cooked in a rich and velvety mustard cream sauce. Infused with garlic, thyme, and Parmesan cheese, this quick stovetop recipe delivers comforting flavors perfect for an easy weeknight dinner.

Ingredients

Scale

Chicken and Seasonings

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste

Cooking Fats

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter

Sauce Ingredients

  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard (optional for texture)
  • ½ teaspoon dried thyme
  • ¼ cup grated Parmesan cheese (optional)

Garnish

  • Fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken: Pat the chicken breasts dry and season both sides generously with salt and black pepper to enhance flavor.
  2. Sear the chicken: Heat olive oil and unsalted butter in a large skillet over medium heat. Add the chicken breasts and sear for 5 to 6 minutes on each side until they develop a golden brown crust and are cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it.
  4. Deglaze and make sauce: Pour in the chicken broth, scraping up any browned bits stuck to the bottom of the pan to incorporate flavor. Stir in heavy cream, Dijon mustard, whole grain mustard if using, and dried thyme. Allow the sauce to simmer gently for 3 to 4 minutes until it thickens slightly.
  5. Add Parmesan and finish the sauce: Stir in the grated Parmesan cheese if desired, enriching the sauce’s creaminess and depth of flavor.
  6. Return chicken and coat in sauce: Place the chicken breasts back into the skillet, spooning the sauce over them. Let it simmer for an additional 2 to 3 minutes to meld flavors and heat through.
  7. Garnish and serve: Sprinkle freshly chopped parsley over the dish before serving while warm, pairing perfectly with mashed potatoes, rice, or roasted vegetables.

Notes

  • Pairs beautifully with mashed potatoes, rice, or roasted vegetables.
  • For a lower-fat version, substitute half-and-half for the heavy cream.
  • You can omit the whole grain mustard if you prefer a smoother sauce texture.
  • Ensure not to overcook the chicken to keep it juicy and tender.
