Instructions
- Preheat oven and prepare pan: Set the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease lightly to prevent sticking.
- Combine dry ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, nutmeg, baking soda, baking powder, and salt until evenly mixed.
- Mix wet ingredients: In a separate bowl, whisk the eggs, melted butter, milk, and vanilla extract together until the mixture is smooth and homogenous.
- Combine wet and dry mixtures: Pour the wet ingredients into the dry ingredients bowl and stir gently just until combined, being careful not to overmix to maintain tender muffins.
- Fold in apples and walnuts: Carefully fold in the peeled and chopped apples along with the chopped walnuts, distributing them evenly throughout the batter.
