Description

These Chocolate Berry Bars combine the fresh flavors of strawberries, blueberries, and raspberries with rich dark chocolate and crunchy toasted almonds and coconut flakes. Sweetened naturally and held together with melted dark chocolate and coconut oil, these bars are chilled to set into a delicious, refreshing treat perfect for a healthy snack or dessert.

Ingredients

Scale

Fruits

  • 1 cup fresh strawberries, chopped into small pieces
  • ¾ cup fresh blueberries
  • ¾ cup fresh raspberries

Chocolate Mixture

  • ¾ cup dark chocolate chips
  • ¼ cup coconut oil

Toppings

  • 2 tablespoons coconut flakes
  • ¼ cup slivered almonds
  • 1 tablespoon chia seeds

Instructions

  1. Melt Chocolate: In a medium microwave-safe bowl, add the dark chocolate chips and coconut oil.
  2. Microwave Chocolate: Melt the mixture in the microwave in 1-minute increments, stirring between each, until melted and smooth.
  3. Set Chocolate Aside: Remove from microwave and set aside to cool slightly.
  4. Toast Almonds and Coconut: Preheat a large skillet over medium heat.
  5. Add Nuts and Coconut: Add the slivered almonds and coconut flakes to the skillet.
  6. Toast Until Golden: Stir frequently and toast until golden brown and fragrant.
  7. Set Toasted Toppings Aside: Remove from heat and set aside.
  8. Prepare Loaf Pan: Line a 9×5 inch loaf pan with parchment paper, allowing some excess to hang over the sides for easy removal later.
  9. Layer the Berries: Place the chopped strawberries, blueberries, and raspberries into the loaf pan in even layers.
  10. Add Toppings: Sprinkle the toasted almonds, toasted coconut flakes, and chia seeds evenly over the berry layers.
  11. Drizzle Chocolate: Evenly drizzle the melted chocolate mixture over the top of the berries and toppings.
  12. Settle the Mixture: Gently tap the loaf pan on the countertop a few times to help everything settle and adhere together.
  13. Freeze: Place the loaf pan in the freezer and freeze for 7 hours or until completely firm and set.
  14. Remove from Freezer: Take the pan out of the freezer once set.
  15. Remove Bars from Pan: Hold onto the parchment flaps and carefully lift the frozen block out onto a cutting board.
  16. Thaw Slightly: Let the block thaw for 2-3 minutes so it softens enough to slice.
  17. Slice Bars: Using a serrated knife, cut the frozen block into 8 equal bars.
  18. Serve and Enjoy: Serve immediately or store in the freezer for a refreshing snack later.

Notes

  • Ensure to use fresh berries for the best taste and texture.
  • Toast the almonds and coconut flakes carefully to avoid burning and bitterness.
  • The bars need to freeze completely to hold their shape, so do not skip the 7-hour freeze time.
  • These bars are best stored in the freezer and can be thawed briefly before eating.
  • Use parchment paper for easy removal and cleaner slicing.
