Description

Chicken Alfredo Lasagna Rolls combine tender lasagna noodles rolled with a creamy mixture of cooked chicken, ricotta, and mozzarella cheeses, all baked in a rich Alfredo sauce. This flavorful Italian-inspired dish is perfect for a comforting dinner and serves six generously.

Ingredients

Scale

Lasagna Rolls

  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp dried Italian seasoning
  • Salt and pepper, to taste

Sauce

  • 2 cups Alfredo sauce (store-bought or homemade)

Garnish

  • Fresh parsley, chopped (optional)

Instructions

  1. Cook noodles: Cook the lasagna noodles according to the package instructions. Drain and set aside to cool slightly to handle.
  2. Prepare filling: In a large bowl, combine shredded cooked chicken, ricotta cheese, 1 cup mozzarella cheese, grated Parmesan, garlic powder, dried Italian seasoning, salt, and pepper. Mix well to create a creamy, flavorful filling.
  3. Assemble rolls: Preheat the oven to 375°F (190°C). Spread a thin layer of Alfredo sauce on the bottom of a baking dish. Lay one cooked lasagna noodle flat and spread 2-3 tablespoons of the chicken cheese mixture along the noodle. Roll it up tightly and place seam-side down in the prepared baking dish. Repeat with remaining noodles and filling.
  4. Add sauce and cheese: Pour the remaining Alfredo sauce evenly over the lasagna rolls. Sprinkle the remaining 1/2 cup shredded mozzarella over the top of the rolls for a golden, cheesy finish.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.
  6. Garnish and serve: Remove from oven, garnish with chopped fresh parsley if desired, and serve the lasagna rolls hot for a hearty and comforting meal.

Notes

  • You can use store-bought Alfredo sauce for convenience or make your own homemade version for enhanced flavor.
  • Shredded rotisserie chicken works well and saves time.
  • Ensure the noodles are cool enough to handle before spreading filling to avoid tearing.
  • Covering with foil during baking keeps the rolls moist and prevents over-browning.
  • Fresh parsley adds a nice color and freshness but can be omitted if unavailable.
