Description

This Cheesy Vegetable and Brown Rice Casserole is a wholesome, comforting dish that combines tender brown rice, vibrant mixed vegetables, and melted cheddar cheese baked to golden perfection. It’s perfect as a hearty main or a satisfying side that brings warmth and nutrition to your table.

Ingredients

Scale

Rice

  • 1 cup brown rice
  • 2 cups water
  • Pinch of salt

Vegetables & Aromatics

  • 2 cups mixed vegetables (fresh or frozen)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Dairy & Pantry

  • 1 ½ cups shredded cheddar cheese
  • 1 cup whole milk (or almond milk)
  • Salt and pepper to taste
  • ½ cup breadcrumbs (plain or panko)
  • 1-2 tablespoons oil for sautéing (e.g., olive oil or vegetable oil)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly coat a baking dish with nonstick spray to prevent sticking during baking.
  2. Cook the Brown Rice: Bring 2 cups of water to a boil in a saucepan. Add the brown rice and a pinch of salt, then cover and reduce heat to simmer. Cook for about 45 minutes until the rice is tender and water is absorbed.
  3. Sauté Onions, Garlic, and Vegetables: Heat oil in a skillet over medium heat. Add chopped onion and minced garlic and sauté for approximately 3 minutes until fragrant. Then add the mixed vegetables, cooking until they are vibrant and still slightly crisp.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked brown rice, sautéed vegetables, milk, half of the shredded cheddar cheese, salt, and pepper. Mix thoroughly to ensure all ingredients are well incorporated.
  5. Assemble the Casserole: Transfer the rice and vegetable mixture into the prepared baking dish. Sprinkle the remaining cheddar cheese evenly over the top, then add the breadcrumbs for a crispy topping.
  6. Bake: Place the dish in the preheated oven and bake for 25 to 30 minutes. Cook until the casserole is bubbly and the top is golden brown. Remove from oven and let it cool slightly before serving.

Notes

  • You can substitute almond milk or any plant-based milk for whole milk to make it dairy-free.
  • Use fresh or frozen mixed vegetables depending on availability; frozen vegetables can be directly added after thawing.
  • For extra flavor, consider adding herbs like thyme or rosemary when sautéing the vegetables.
  • Adjust salt and pepper according to your taste preference.
  • For a gluten-free option, use gluten-free breadcrumbs or omit breadcrumbs entirely.
