Description

A delightful Caprese-inspired roasted asparagus dish combining tender roasted asparagus, juicy cherry tomatoes, melted mozzarella, fresh basil, and a sweet balsamic glaze drizzle. Perfect as a vibrant side dish or light appetizer.

Ingredients

Scale

Vegetables

  • 1 lb asparagus, trimmed
  • 2 cups cherry tomatoes, halved

Dairy

  • 2 cups shredded mozzarella cheese

Seasonings and Oils

  • 2 tbsp olive oil, for drizzling (divided)
  • Kosher salt and pepper, to taste

Garnish

  • Fresh chopped basil, for garnish
  • Bottled balsamic glaze, for garnish

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and lightly spray it with non-stick cooking spray to prevent sticking.
  2. Arrange the vegetables: Place the trimmed asparagus neatly on one side of the baking sheet and arrange the halved cherry tomatoes on the other side to ensure even cooking.
  3. Season and oil: Drizzle 1 tablespoon of olive oil over the asparagus and season with kosher salt and freshly ground black pepper to taste. Repeat the same process for the cherry tomatoes with the remaining olive oil and seasonings.
  4. Roast the vegetables: Place the baking sheet in the preheated oven and roast for a total of 10 minutes, allowing the vegetables to soften and caramelize.
  5. Add the cheese: After 5 minutes of roasting, carefully remove the baking sheet from the oven. Sprinkle the shredded mozzarella cheese evenly over the asparagus side. Return the sheet to the oven and roast for an additional 5 minutes until the cheese is melted and golden brown.
  6. Serve and garnish: Transfer the roasted asparagus with melted mozzarella to a serving plate. Top with the roasted cherry tomatoes, sprinkle with fresh chopped basil, and finish with a drizzle of balsamic glaze for a burst of sweet and tangy flavor.

Notes

  • Trim the tough ends of the asparagus before roasting for a tender bite.
  • If you prefer, fresh mozzarella can be used in small pieces instead of shredded for a creamier texture.
  • Balsamic glaze can be made at home by reducing balsamic vinegar until thick, or purchased bottled for convenience.
  • Serve warm to enjoy the gooey melted cheese and fresh herb contrast.
  • This dish pairs well with grilled chicken or crusty bread for a complete meal.
