  • 1/2 pound ground beef or pork sausage
  • 1 small onion, finely chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 2 green onions, sliced (optional, for garnish)


Instructions

  1. Heat olive oil: Heat olive oil in a large skillet or saucepan over medium-high heat.
  2. Cook meat: Add the ground meat and cook until browned, breaking it up with a spoon.
  3. Sauté vegetables: Add onion, bell pepper, and celery, sauté until tender.
  4. Add garlic: Stir in garlic and cook for another minute.
  5. Toast rice: Add rice and toast for 1–2 minutes.
  6. Add broth and seasonings: Pour in chicken broth, add Cajun seasoning, paprika, pepper, and thyme. Bring to a boil.
  7. Simmer: Reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
  8. Rest and fluff: Remove from heat, let it rest for 5 minutes, fluff with a fork, and garnish with green onions.

  • You can substitute the meat with ground turkey or omit it for a vegetarian version.
