Coconut Milk Layer

Instructions

  1. Prepare Blackberry Puree: In a blender or food processor, combine the blackberries with 1 tablespoon of honey or maple syrup and the lime juice. Blend until smooth. Optionally, strain the mixture through a fine mesh sieve to remove seeds for a smoother texture. Set aside.
  2. Blend Pineapple Mixture: Rinse the blender, then add the pineapple chunks and remaining tablespoon of honey or maple syrup. Blend until smooth. Set aside.
  3. Mix Coconut Layer: In a small bowl, mix the coconut milk with vanilla extract thoroughly to combine.
  4. Assemble Popsicles: Layer the blackberry puree, pineapple mixture, and coconut milk into popsicle molds, alternating the layers. Use a skewer or toothpick to gently swirl the layers, creating a marbled effect.
  5. Freeze: Insert popsicle sticks into the molds and place them in the freezer. Freeze for at least 6 hours or until completely solid.
  6. Remove and Serve: To release the popsicles, run the molds under warm water for a few seconds, then gently pull out each popsicle. Enjoy immediately or store in the freezer.
