Description

These Beef Wellington Bites are a delightful twist on the classic dish, perfect for serving as appetizers at any gathering. Tender beef cubes with a savory mushroom mixture, all wrapped in flaky puff pastry.

Beef Wellington Bites:

  • 1 pound beef tenderloin, trimmed and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon butter
  • 1 cup finely chopped mushrooms (cremini or button)
  • 1 teaspoon minced garlic
  • 1 tablespoon minced shallot
  • 1/2 teaspoon thyme leaves
  • 1 sheet puff pastry (thawed)
  • 1 egg (beaten for egg wash)
  • all-purpose flour for dusting


Instructions

  1. Preheat the oven and prepare baking sheet: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season and sear beef: Season the beef cubes with salt and pepper. Sear in a skillet with olive oil over medium-high heat for about 1 minute per side. Remove and cool, then brush with Dijon mustard.
  3. Prepare mushroom mixture: In the same skillet, sauté mushrooms, garlic, shallot, and thyme until soft. Let cool.
  4. Assemble: Roll out puff pastry, cut into squares, place mushroom mixture on each, top with a beef cube, and seal.
  5. Bake: Place on baking sheet, brush with egg wash, and bake for 15-18 minutes until golden brown.
  6. Serve: Let rest for 5 minutes before serving.

Notes

  • Serve with horseradish cream or balsamic glaze for dipping.
  • Can be prepped ahead and frozen before baking – bake from frozen with 3–5 extra minutes.
