Description

This Balsamic Glazed Salmon with Asparagus is a healthy, flavorful one-pan meal featuring tender salmon fillets roasted alongside crisp-tender asparagus. The salmon is coated with a tangy and slightly sweet balsamic glaze made from vinegar, honey, garlic, mustard, and lemon juice, creating a perfectly balanced dish that is quick and easy to prepare.

Ingredients

Scale

Salmon and Vegetables

  • Four 6-ounce salmon fillets
  • 1 pound asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt, divided
  • ½ teaspoon black pepper, divided

Balsamic Glaze

  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice

Garnish

  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make for easy cleanup.
  2. Arrange Asparagus and Season: Place the trimmed asparagus on one side of the baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle half of the kosher salt and black pepper evenly over the asparagus.
  3. Prepare Salmon: Arrange the salmon fillets on the opposite side of the baking sheet. Drizzle the remaining 1 tablespoon olive oil over the fillets.
  4. Make the Balsamic Glaze: In a small bowl, whisk together balsamic vinegar, honey, minced garlic, Dijon mustard, fresh lemon juice, and the remaining salt and pepper until well combined.
  5. Glaze the Salmon: Spoon the balsamic glaze evenly over each salmon fillet, ensuring all pieces are well coated.
  6. Roast: Place the baking sheet in the preheated oven and roast for 12 to 15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
  7. Optional Crispier Asparagus: If you prefer your asparagus crispier, remove the salmon after baking and return the asparagus to the oven for an additional 3 to 5 minutes.
  8. Garnish and Serve: Remove the baking sheet from the oven, garnish the salmon fillets with chopped fresh parsley, and serve immediately.

Notes

  • For a sweeter glaze, maple syrup can be used as a substitute for honey.
  • If you prefer crispier asparagus, bake it an additional 3 to 5 minutes after removing the salmon.
  • Use parchment paper or a non-stick spray on the baking sheet for easier cleanup.
  • Adjust seasoning according to taste, adding more lemon juice or honey as preferred.
