Ingredients
Scale
Salmon and Vegetables
- Four 6-ounce salmon fillets
- 1 pound asparagus, trimmed
- 2 tablespoons olive oil
- 1 teaspoon kosher salt, divided
- ½ teaspoon black pepper, divided
Balsamic Glaze
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh lemon juice
Garnish
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make for easy cleanup.
- Arrange Asparagus and Season: Place the trimmed asparagus on one side of the baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle half of the kosher salt and black pepper evenly over the asparagus.
- Prepare Salmon: Arrange the salmon fillets on the opposite side of the baking sheet. Drizzle the remaining 1 tablespoon olive oil over the fillets.
- Make the Balsamic Glaze: In a small bowl, whisk together balsamic vinegar, honey, minced garlic, Dijon mustard, fresh lemon juice, and the remaining salt and pepper until well combined.
- Glaze the Salmon: Spoon the balsamic glaze evenly over each salmon fillet, ensuring all pieces are well coated.
- Roast: Place the baking sheet in the preheated oven and roast for 12 to 15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
- Optional Crispier Asparagus: If you prefer your asparagus crispier, remove the salmon after baking and return the asparagus to the oven for an additional 3 to 5 minutes.
- Garnish and Serve: Remove the baking sheet from the oven, garnish the salmon fillets with chopped fresh parsley, and serve immediately.
Notes
- For a sweeter glaze, maple syrup can be used as a substitute for honey.
- If you prefer crispier asparagus, bake it an additional 3 to 5 minutes after removing the salmon.
- Use parchment paper or a non-stick spray on the baking sheet for easier cleanup.
- Adjust seasoning according to taste, adding more lemon juice or honey as preferred.
