Ingredients
Scale
Zucchini
- 3 small or 2 medium zucchini
Seasonings and Oil
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon basil
- Salt and pepper to taste
Cheese
- 1/2 cup grated parmesan and pecorino cheese (or just parmesan)
Instructions
- Preheat Oven: Preheat the oven to 450°F (230°C) or 400°F (200°C) with a fan setting. Position the rack one shelf above the center.
- Prepare Zucchini: Wash and dry the zucchini, then cut them into thick slices about 1/2 inch (1 1/4 cm) thick to ensure even cooking.
- Season Zucchini: Place the zucchini slices on a baking sheet, drizzle with olive oil, season with salt and pepper, and toss to coat evenly. Spread the slices out so they are not overlapping.
- Add Spices and Cheese: Sprinkle the zucchini slices with garlic powder and basil, then generously top with the grated parmesan and pecorino cheese mixture.
- Bake and Broil: Bake for 9 minutes initially. Then switch on the broiler and bake for an additional 2-3 minutes until the cheese turns golden brown and bubbling. Keep a close eye to avoid burning.
- Serve: Remove from the oven and enjoy your delicious baked parmesan zucchini warm as a side or snack.
Notes
- Use a fan setting for more even cooking if your oven supports it.
- For a stronger cheese flavor, increase the amount of parmesan and pecorino cheese slightly.
- Try adding a sprinkle of red pepper flakes for a spicy kick.
- Ensure zucchini slices are not too thin, to prevent them from becoming mushy.
- Serving immediately after baking keeps the cheese crispy and zucchini tender.
