Risotto Mixture:
- 2 cups cooked and chilled risotto or arborio rice
- 1/2 cup grated Parmesan cheese
- 1 large egg, beaten

Filling:
- 1/2 cup shredded mozzarella cheese, cut into small cubes
Breading:
- 1/2 cup all-purpose flour
- 1 cup Italian-style breadcrumbs
- 1 large egg, beaten (for coating)

- Vegetable oil for frying
Instructions
- Mix Risotto: In a large bowl, combine chilled risotto, Parmesan cheese, beaten egg, salt, and pepper. Mix well.
- Form Arancini: Take 2 tablespoons of the mixture, flatten in hand, place a cube of mozzarella in the center, shape into a ball.
- Bread Arancini: Roll each ball in flour, dip in beaten egg, coat with breadcrumbs.
- Fry Arancini: Heat oil to 350°F, fry arancini in batches for 3-4 minutes until golden brown. Drain on paper towels.
- Serve: Enjoy warm with marinara sauce.
