Description

Risotto Mixture:

  • 2 cups cooked and chilled risotto or arborio rice
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Filling:

  • 1/2 cup shredded mozzarella cheese, cut into small cubes

Breading:

  • 1/2 cup all-purpose flour
  • 1 cup Italian-style breadcrumbs
  • 1 large egg, beaten (for coating)

Others:

  • Vegetable oil for frying

Instructions

  1. Mix Risotto: In a large bowl, combine chilled risotto, Parmesan cheese, beaten egg, salt, and pepper. Mix well.
  2. Form Arancini: Take 2 tablespoons of the mixture, flatten in hand, place a cube of mozzarella in the center, shape into a ball.
  3. Bread Arancini: Roll each ball in flour, dip in beaten egg, coat with breadcrumbs.
  4. Fry Arancini: Heat oil to 350°F, fry arancini in batches for 3-4 minutes until golden brown. Drain on paper towels.
  5. Serve: Enjoy warm with marinara sauce.
