Description

A refreshing and nutritious Apricot Strawberry Smoothie made with fresh apricots, strawberries, pineapple, and coconut water. This vibrant smoothie is perfect for a quick breakfast or a healthy snack, offering a delightful blend of sweet and tangy flavors along with a boost of Omega-3 when flax seed oil is added.

Ingredients

Scale

Liquids

  • 1 cup cold coconut water (or cold filtered water)

Fruits

  • 1 cup strawberries, hulled (can substitute with 1 cup blueberries)
  • 2 cups (about 3/4 lb) apricots, pitted
  • 1 cup frozen pineapple

Add-ins

  • 1 tsp flax seed oil (optional – adds a nice punch of Omega 3)

Instructions

  1. Prepare the ingredients: Wash and hull the strawberries if not already done. Pit the apricots and ensure your frozen pineapple is ready to use. Measure out all ingredients for easy blending.
  2. Add ingredients to blender: Pour the cold coconut water into the blender first, then add the strawberries, apricots, frozen pineapple, and flax seed oil if using. This order helps with smooth blending.
  3. Blend until smooth: Blend all ingredients on high speed until the mixture is smooth and creamy, with no large fruit pieces remaining. You may need to stop and scrape down the sides once or twice.
  4. Serve immediately: Pour the smoothie into glasses and enjoy immediately for the best fresh flavor and texture.

Notes

  • You can substitute strawberries with blueberries for a different but equally delicious flavor.
  • Flax seed oil is optional but recommended for an added boost of Omega 3 fatty acids.
  • If you prefer a thicker smoothie, add more frozen pineapple or a few ice cubes.
  • This smoothie is best consumed fresh but can be refrigerated for up to 24 hours; shake well before drinking.
