Instructions

  2. Thicken the filling: Stir in the cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon water) and cook for an additional 1–2 minutes, stirring constantly, until the mixture thickens. Remove from heat and allow to cool slightly to prevent sogginess when wrapping.
  3. Assemble the egg rolls: Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the apple filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides snugly. Roll the wrapper tightly upward and seal the edge with a dab of water to prevent it from opening during frying.
