Ingredients
Scale
Dry Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon cornmeal
- 2 teaspoons baking powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Wet Ingredients
- ¾ cup milk
- 1 large egg
Main Ingredient
- 2 cups sweet onions, finely chopped (Vidalia recommended)
For Frying
- Vegetable oil, for frying (about ½ inch depth in skillet)
Instructions
- Prepare the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, sugar, cornmeal, baking powder, salt, and black pepper. Mix these ingredients thoroughly to ensure an even distribution of leavening and seasoning.
- Combine Wet Ingredients: In a separate bowl, whisk together the milk and egg until fully blended and slightly frothy to aid the batter’s lightness.
- Mix Batter: Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined. Avoid overmixing to keep the fritters tender. Then fold in the finely chopped sweet onions carefully, ensuring they are evenly incorporated throughout the batter.
- Heat Oil: Heat about ½ inch of vegetable oil in a heavy skillet over medium heat. Wait until the oil is hot enough—test by dropping a small amount of batter; it should sizzle immediately.
- Fry Fritters: Drop spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon to form fritters. Fry each fritter for 2 to 3 minutes per side or until they turn golden brown and crispy.
- Drain and Serve: Remove the fritters from the skillet and place them on a paper towel–lined plate to drain excess oil. Serve the fritters warm with your favorite dipping sauces such as ranch, spicy mayo, or honey mustard.
Notes
- Use sweet onions like Vidalia for the best flavor and natural sweetness.
- These fritters pair perfectly with dipping sauces such as ranch, spicy mayo, or honey mustard.
- Ensure the oil is sufficiently hot before frying to achieve crispiness and avoid greasy fritters.
- Do not overmix the batter to maintain a light and crispy texture.
